BEETROOT HUMUS
Ingredients
– One small beet or half of it
– 2 Table Spoon tahini
– 300g cooked chickpeas (or one small can)
– aquafaba (the cooking water of the chickpeas)
– the juice of half a lemon
– 5 Table spoon olive oil
– salt, pepper
Instructions
Use raw beetroots to take advantage of all its vitamins, since most of them are killed during cooking.
Eat raw as much as you can. Raw food is food full of life, it’s the one that can provide you the biggest amount of vitamins and essential minerals necessary to the body.
Using raw beets you will need to process them a littel bit longer to get a creamy hummus.
Start processing the beets with the lemon juice, the olive oil and the tahini.
Once nice and creamy add the chickpeas, salt and pepper.
Here you go, a super healthy dip to snack on, full of proteins and antioxydants.
